Aubergine served our last dinners and hosted our final lodging guests on Saturday July 29, 2006. This was our 12th year in Hillsdale and it was our sincere honor to cook for and host many long time friends and supporters over the seasons and the years. We are especially grateful to all those staff, present and former, who toiled with us through countless days and nights and strove to maintain a valued tradition of excellence and warm hospitality. Good luck an much love to all of you. We are grateful also to our neighbors in Hillsdale, Copake, and surrounding communities, who took note of our efforts and were there to lend a hand in times of need, inconvenience and confusion. We endeavored to make you proud to have us working with you here in this community. We know that this beautiful 1783 house will be cared for by its new owner, and that the previous generations of families and businesses that have long animated this charming residence will be honored by her bright future.
